can a mounted creature use the defender ability when an adjacent creature attacks its mount?

Yes
A mount and its mounted creature are allies.
A creature is considered adjacent to a creatures in its own square.
Mount and mounted creature occupy the same spaces as the mount.
This is all clarified in various points of the errata, but those simple paraphrased statements should help explain the 'why'
