| Actually, to check if you have line of sight, you are not limited to drawing the line from a corner only. You can use any part of any square occupied by a creature, including the space within the square.
In the Beholder's case, you can check from any part of any of the four squares occupied by the Beholder. You can even check from the center of a "small" square if you want. | |

| Yeah, if line of sight were corner to corner it would make the Beholder much less usefull. It makes much more sense to use any spot in the squares that the Beholder is sitting on (or hovering over, I guess).
