I don't have the relevant books with me, but what you say sounds correct. I'd need to read the relevant feats though. What i want to comment on is

This makes no sense at all. The monsters job in D&D is to die. After being a PITA to the players of course. I can understand wanting the monsters to be an appropriate challenge and even letting certain villains get away so they have a recurring role, but not wanting PC's to kill monsters in general is wrong. It almost sounds like it's a DM vs player type game.

Four attacks at 7th level (assuming +7 BAB) is correct, but remember that you're fighting with two-weapon penalties.

I still don't understand how one "attacks" with armor spikes, but whatever. :/

its a kick or sticking out a arm, the simple fact of moving could cause the damage, a down and dirty combat style.

ps are there any rules on being grappled while wearing armour spikes

yes there it is, in players handbook in the armour section under armour spikes. they deal 1d6 for med armour that is listed under the weapons

the big thing is that you need to be proficient with them or take a -4 to you grapple check. they do damage if the grapple check is successful.
